Description
Fontana Cuvée Celadón is an organic white from Bodegas Fontana, made in D.O. Uclés from 65% Verdejo and 35% Sauvignon Blanc. The vineyards lie between 750 and 775 metres above sea level on clay-limestone soils, a combination that helps preserve freshness and natural acidity. The winery describes Celadón as a crisp, lively, unoaked dry white focused on fruit purity and aromatic precision.
The two varieties are harvested early and fermented separately at low temperature after cold maceration. The wine then spends more than six months on its lees, gaining volume and persistence. In the glass it shows citrus, fresh grass and subtle exotic fruit. The palate is fresh, balanced and silky, with lively acidity and a long, dry finish marked by a clear mineral backbone.
