Uva Non Grata refers to the reputation that Gamay once had. Thankfully, however, this is changing. The Gamay grapes are grown in vineyards located in the hills to the north west of Lyon in Eastern France. Hand picked early in the morning to retain their freshness, they are vinified using carbonic maceration, where the berries are put into the vats and the weight crushes those below, it is a technique that generates very juicy fruit character.
