The grapes are carefully selected the northern part of California’s central valley near Manteca, where the hot days are cooled by the San Joaquin river delta, providing freshness for the grapes during the long summer days. Following a traditional fermentation in stainless steel tanks wine is aged for 6 months in oak barrels to add complexity.
