Handpicked, selectively harvested by hand bunch by bunch fully ripe, picture perfect grapes with 15% noble botrytis from the very best parcels. Gentle pressing, must settling by gravity sedimentation. The slow temperature controlled cool fermentation with indigenous (wild) yeast (spontaneous fermentation) in 100% stainless steel tanks took 3 months. No fining, “vegan” fermentation stopped by dropping the temperature to inactivate the yeast.
