Kooyong are one of the top new generation wine producers on the Mornington Peninsula. The grapes are fermented without yeast inoculation that is to say using wild yeasts, in open vats for 18 to 21 days. The maturation period was 11 months in French oak barriques, 15% new. It was bottled without fining and with minimal filtration. This is biodynamic wine suitable for vegans and vegetarians.
