This 17th century property of 19ha in Chorey-lès-Beaune was bought by the Maillard’s in 1952. Pascal Maillard is one of Burgundy’s friendliest and most down-to-earth winemakers. The hand harvested grapes are fermented slowly, it is then matured in French oak barrels, 25% new 228 litres, for 18 months. Finally the wine is given a very light filtration prior to bottling.
