The sweet wines of Sauternes are among the finest in the world. Harvesting is very delicate and is entrusted to an experienced team. The grapes are picked one at a time, each time taking only those affected by the famous Botrytis Cinerea which concentrates the sugars. A rigourous sorting process is undergone to ensure only the best fruit is used. The must ferments in casks, an ancestral technique which facilitates optimal temperature control. Maturation for one year in barrels.
A highly aromatic wine with lime, pinepple, apricots and honeyed aromas. On the palate it has delicious flavours of dried apricot, honey, marmalade flavours and perfectly balanced with acidity and a long finish.
Sauternes is complex enough to pair with a wide selection of sweet dishes, blue cheese and foie gras.
