This 17th century property of 19ha in Chorey-lès-Beaune was bought by the Maillard’s in 1952. Pascal Maillard is one of Burgundy’s friendliest and most down-to-earth winemakers. The hand harvested grapes are fermented slowly, it is then matured in French oak barrels, 25% new 228 litres, for 18 months. Finally the wine is given a very light filtration prior to bottling.

Style

Above all this is an elegant, hand crafted wine. The colour is a rather pale, ruby red. It has aromas of cherry and raspberry with complex earthy elements and sweet spices. On the palate you really notices the fruits such as blackberry, raspberry and strawberry mixed subtly with a layer of oak and sweet spices and soft tannins.

Roast lamb with vegetables, Grilled Salmon, hard cheeses.
